Flavored organic beverage made from dealcoholized Sauvignon blanc grapes.
Vinification: Pneumatic pressing under inert gas (to protect juice from oxidation). Separation of first and final pressings. Cold, tight settling. Cold stabilization for 1 week. Alcoholic fermentation in temperature-controlled stainless steel tanks.
De-alcoholization: The vat is selected according to its balance (not too alcoholic and not too acidic) and its structure, which must be rich enough to withstand dealcoholization. The alcohol is evaporated by exerting low pressure on the wine under vacuum.
