Terroirs: : A blend of 3 soils of the Vienne: groie soil (Jurassic); ostracée marl (Cenomanian) and clay-sand soil on flinty tuffeau (Turonian)
Yield: 50 hl per hectare
Grape varieties: 100% Sauvignon blanc
Vine age: Between 10 and 35 years old
Alcohol content: 12.5%.
Winemkaing : Pneumatic pressing with separation of free-run and press juices. Cold static settling. Alcoholic fermentation in temperature-controlled stainless steel vats for 2 to 3 weeks.
Aging: Minimum 6 months on fine lees in stainless steel tanks.
