Terroir :
Blend of 3 Vienne soils: groie soil (Jurassic); ostracée marl (Cenomanian) and clay-sand soil over flinty tuffeau (Turonian)
Yield: 40hl per hectare
Grape variety: Pinot noir
Vine age: Between 10 and 35 years old

Alcohol content: 12.5%.

Winemaking: After selective sorting, the grapes are 100% destemmed in a stainless steel truncated-cone tank. Pre-fermentation maceration Cold fermentation for 3 to 5 days. Vatting for 10 to 15 days with daily punching of the cap at the start of alcoholic fermentation. The wine is racked into oak barrels, followed by spontaneous malolactic fermentation.

Ageing : 6 months in stainless steel vats and 6 months in barrels.
