Terroir: Clay-limestone soils on white tuffeau (Middle Turonian)
Yield: 35-40 hl per hectare.
Grape variety: 100% Cabernet Franc
Vine age: 20 and 50 years old
Alcohol content: 13.7%.
Winemaking: The grapes are 100% destemmed in truncated-cone stainless-steel vats. Fermentation lasts 10 to 15 days, with light pumping over for gentle extraction. The wine is then put into terracotta jars and barrel, followed by spontaneous malolactic fermentation.
Aging : Terracotta jar and oak barrel for 12 months.
