Yield: 50hl per hectare
Grape varieties: Sauvignon blanc
Age of vines : Between 10 and 35 years old
Alcohol content: 10%.
Vinification: Pneumatic pressing with separation of free-run and press juices. Static cold settling. Alcoholic fermentation in temperature-controlled stainless steel vats for 2 to 3 weeks. Fermentation stopped by chilling, then bottled.
Maturation: Bottled in October… 100% primeur!
